Zucchini Mozzarella Quiche
Zucchini and Mozzarella Quiche is a savory and delicious dish that is perfect for any occasion! The buttery, flaky, pie crust is filled with creamy mozzarella cheese, fresh zucchini, and eggs. Quiche can be a side dish or main dish, and served at breakfast, brunch, lunch, or dinner!

- 9 inch frozen pie crust unbaked
- 6 large eggs
- 1 cup half and half
- ½ teaspoon kosher salt
- ¼ teaspoon ground black pepper
- 2 cups shredded zucchini
- 1 cup shredded mozzarella cheese
Preheat your oven to 350°F. Place your unbaked pie crust on a rimmed baking sheet.
Combine the eggs, half and half, salt, and pepper in a small mixing bowl. Whisk until the eggs are light and fluffy. Set aside.
Wrap the shredded zucchini in a paper towel and squeeze as much moisture out of the zucchini as you can. Spread the shredded zucchini in an even layer in the bottom of the pie crust.
Top the zucchini with a layer of shredded mozzarella.
Pour the egg mixture over top of the zucchini and cheese.
Carefully transfer your quiche to the preheated oven. Bake for 45-60 minutes. The quiche will be done with the center is firm and when a toothpick inserted into the middle of the quiche comes out clean.
When finished, remove it from the oven and let it fully cool before cutting into slices. Enjoy!
