Chocolate Chip Oatmeal Banana Bread

Ingredients

  • 2 large bananas very ripe
  • ¾ cup brown sugar
  • ¼ cup salted butter melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup regular rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup mini chocolate chips

Instructions

  • Preheat your oven to 350°F.  Lightly grease a loaf pan with butter or line it with parchment paper. 
  • Peel your ripe bananas and place them in a large mixing bowl.  Use the back of a fork to mash the bananas until they're just about smooth.  Some lumps can remain. 
  • Add the brown sugar, melted butter, eggs, and vanilla extract to the bowl and mix until smooth.  You can use a regular mixing spoon.  You do not need an electric mixer.  
  • Add the all-purpose flour, rolled oats, baking powder, baking soda, cinnamon, and salt to the bowl and mix until the dry ingredients are fully incorporated into the wet ingredients. 
  • Fold the mini chocolate chips into the banana bread batter.  
  • Carefully pour the batter into your prepared loaf pan.  Use a silicone bowl scraper to get every last bit of batter out of the bowl and into the pan.  Spread the batter out evenly in the bread pan. 
  • Bake the Chocolate Chip Oatmeal Banana Bread for 35-40 minutes at 350°F or until done in the middle.  You'll know your bread is done when a toothpick inserted into the middle of the bread comes out clean.  
  • Let the bread cool for about 15 minutes before removing it from the loaf pan.  Let the bread fully cool before slicing.  Enjoy!
