Baked Buffalo Chicken Thighs

Boneless and skinless Buffalo Chicken Thighs are seasoned in a homemade seasoning blend, and smothered in buffalo sauce and melted butter. This 30-minute dinner recipe is the perfect alternative when you're craving buffalo chicken wings!  

Ingredients

  • 2 pounds boneless skinless chicken thighs - about 8 chicken thighs
  • 1/4 cup salted butter
  • 1/2 cup buffalo sauce
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon paprika
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper

Instructions

  1. Preheat your oven to 425° Fahrenheit.  Line a rimmed baking sheet with parchment paper.  Lay the boneless and skinless chicken thighs out on the parchment-lined baking sheet and pat dry with a paper towel.   
  2. Melt the butter in a small saucepan over low heat.  Add the buffalo sauce and honey.  Whisk until smooth and then remove from the heat.
  3. Combine the garlic powder, onion powder, oregano, paprika, salt, and pepper in a small bowl. 
  4.  Season both sides of the chicken thighs with the seasoning blend. 
  5. Spoon half of the buffalo sauce combination over top of the chicken thighs.  Reserve the remaining half of the sauce. 
  6. Transfer the chicken thighs to the preheated oven and bake for 15 minutes.
  7. Remove the chicken from the oven and spoon the remaining half of the sauce over top of each chicken thigh.  Return the chicken thighs to the oven and continue cooking for another 10 minutes. 
  8. Check the internal temperature of the chicken using a digital meat thermometer.  If the chicken has not yet reached at least 165°F, then continue cooking the chicken until it has.   
  9. Return the chicken to the oven and broil the chicken on high for 2-3 minutes to crisp up the tops of the thighs. 
  10. Remove the chicken from the oven and let it rest for 10 minutes before slicing.  Serve with blue cheese or ranch dressing and enjoy!

Notes

  • Store cooked chicken thighs in the refrigerator in an air-tight container for 3-4 days.
  • You cannot substitute bone-in, skin-on chicken thighs for boneless and skinless chicken thighs in this recipe. The cooking time would change and skin-on chicken thighs produce a lot of fat when they're cooking. This could change the flavors in this recipe.
