BLT Bagel Sandwich

I put a spin on the classic bacon, lettuce, and tomato sandwich combo by serving it on a fresh bagel with a homemade avocado cream cheese spread. My BLT Bagel Sandwich is an easy and delicious recipe that you can serve at breakfast, lunch, or dinner!   

Ingredients

  • 4 ounces of cream cheese
  • 1/2 of a whole avocado
  • 1 teaspoon lemon juice
  • 4 tablespoons fresh green onion - diced
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon pepper
  • 1 large bagel
  • 3 slices bacon - cooked
  • 2-3 large lettuce leaves
  • 1 large tomato - sliced

Instructions

  1. Soften the cream cheese in a microwave-safe bowl in the microwave for 30 seconds. 
  2. Add the avocado, lemon juice, green onion, salt, and pepper to the softened cream cheese and mix them together.
  3. Slice the bagel in half.  Spread 2-4 tablespoons of the avocado cream cheese onto the cut sides of the bagel.  
  4. Layer the bacon, lettuce, and sliced tomato onto the bottom half of the bagel.  Top the bottom half of the bagel with the top half.
  5. Serve and enjoy!

Notes

  • Variations - Toast the bagel, swap pork bacon for turkey bacon or tempeh bacon, use arugula instead of green leaf lettuce, or add a fried egg to make this a breakfast sandwich!
