Oven-Baked Chicken Thighs (Bone-In)

I cook a lot of chicken thigh recipes, and I can confidently say that oven-baked chicken thighs (bone-in) are the easiest to master! This recipe isn't complicated at all. It's simply my go-to method for perfectly baked chicken thighs that keeps the skin crispy and meat juicy every single time!

Ingredients

  • 8 bone-in chicken thighs
  • 2 teaspoons extra virgin olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon kosher salt
  • ¼ teaspoon ground black pepper

Instructions

  • Preheat your oven to 400°F and place a wire rack on a medium-sized baking sheet. 
  • Combine the garlic powder, paprika, onion powder, salt, and pepper in a small bowl.
  • Use paper towels to pat dry all sides of the chicken thighs. 
  •  Lightly drizzle both sides of the chicken thighs with the olive oil. Use your hands to spread it around evenly. 
  • Coat all sides of the chicken thighs with the seasoning blend. Try also to rub it under the skin if you can. 
  • Place the thighs skin-side up on your prepared baking sheet and bake at 400°F for 35-40 minutes, or until their internal temperature reaches at least 165°F. 
  • Let the baked chicken thighs rest for about 5 minutes before serving.
  • Optional step: For extra crispy skin, broil for 1-2 minutes at the end of baking time. 

Notes

  • Let the chicken sit at room temperature for 15-30 minutes before baking. This helps them cook more evenly.
  • Check for doneness using a meat thermometer. All poultry should be cooked to a minimum internal temperature of 165°F, but I prefer to cook bone-in chicken thighs to 175°F. They're more tender this way, and thanks to the extra fat, they don't dry out!
