- 3 cups chopped cucumber
- 2 cups halved cherry tomatoes
- ¼ cup thinly sliced red onion
- ½ cup chopped Kalamata olives pitted
- 1 tablespoon chopped fresh parsley heaping
- 1 tablespoon chopped fresh basil heaping
- 1 tablespoon red wine vinegar
- ¼ cup lemon juice
- 2 tablespoons extra virgin olive oil
- ½ cup crumbly feta cheese
Add the cucumbers, tomatoes, sliced onion, olives, and fresh herbs to a medium-sized mixing bowl and mix to combine.
Drizzle the red wine vinegar, lemon juice, and olive oil over the salad and give it another good stir.
Gently mix in the feta cheese.
Serve immediately at room temperature, and enjoy!
