Ingredients

  • 2-3 pounds chicken breast
  • 1 cup chicken stock/broth
  • Optional: Kosher salt, black pepper

Instructions

  • Preheat your oven to 350°F.
  • Trim any fatty pieces from your chicken breast and then place it in an enameled Dutch Oven in a single layer.  Some overlapping is fine.
  • Feel free to season the chicken with salt and pepper.  I like to season mine, but this step is optional.
  • Pour 1 cup of chicken stock (or chicken broth) over the chicken.
  • Cover the Dutch Oven with a tight-fitting lid and place it into your preheated oven.
  • Cook the chicken for 90 minutes.  Once it's done, check that it has reached an internal temperature of at least 165°F.
  • Transfer the chicken to a mixing bowl and shred it with two forks or an electric mixer. If you'd like, you can mix in some of the juices leftover in the Dutch oven for added moisture and flavor.
  • Serve immediately or store for enjoying later!
