30-Minute Busy Day Soup

Busy Day Soup is fuss-free comfort food, easily made on hectic weeknights. Made entirely in one pot, this flavorful soup doesn't require any chopping, sautéing, or browning - and it's ready to serve in about 30 minutes!

Ingredients

  • 4 cups low-sodium vegetable broth
  • 2 cups water
  • 2 tablespoons tomato paste
  • 1 tablespoon beef bouillon paste
  • 2 tablespoons onion flakes
  • ½ teaspoon onion powder
  • ½ teaspoon ground paprika
  • ½ teaspoon garlic powder
  • ¼ teaspoon ground black pepper
  • 16 ounces frozen beef meatballs
  • 32 ounces frozen mixed veggies
  • 2, 16 ounce cans diced tomatoes with juices
  • 1 cup dry macaroni noodles

Instructions

  • Add the vegetable broth and water to a large soup pot or stock pot over high heat. Bring to a boil. 
  • Stir in the beef bouillon, tomato paste, onion flakes, onion powder, garlic powder, paprika, and black pepper. Stir until the bouillon and tomato paste are dissolved. 
  • Add in the frozen meatballs, frozen mixed vegetables, and diced tomatoes. Bring the soup back up to a boil over high heat. 
  • Stir in the dry macaroni noodles. Cover, reduce the heat to a simmer, and cook until the pasta is tender, about 15 minutes. 
  • Remove from the heat and serve immediately. Enjoy! 

Notes

  • I like to garnish my soup with a generous amount of grated parmesan cheese and a few soup crackers. 
  • Feel free to add fresh herbs for even more flavor! Chopped flat-leaf parsley or fresh basil would be delicious.  
  • Adjust seasonings to taste. I did not add salt to the recipe due to the salt already in the vegetable broth and beef bouillon. 
  • If the soup is too thick, add more water to thin it out.
