Oat Flour Pancakes {Gluten Free}

Oat flour pancakes are hearty and filling pancakes made from ground rolled oats. They are high in fiber, gluten free and taste best served with fresh fruit and pure maple syrup.

Ingredients

  • 2 cups oat flour
  • 2 tablespoons cane sugar
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 2 cups whole milk
  • 2 eggs
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract
  • 2 teaspoons white vinegar
  • 1-2 tablespoons coconut oil
  • Pure maple syrup - for serving

Instructions

  1. In a medium-sized mixing bowl mix together the oat flour, cane sugar, baking powder and cinnamon.
  2. In a small mixing bowl, whisk together the milk, eggs, melted butter, vanilla extract and white vinegar.
  3. Pour the wet ingredients into the bowl of dry ingredients.  Mix together until the oat flour pancake batter is smooth and no lumps remain. 
  4. Oil and preheat a skillet/griddle over medium heat.  Start with 1/2 tablespoon of coconut oil and continue adding coconut oil to your skillet/griddle as needed.  
  5. When your skillet is hot, pour 1/4 cup of the pancake batter onto the skillet.  Cook the pancake for 1-2 minutes.  Flip the pancake over and continue cooking the other side of the pancake for about another minute.  Remove the cooked pancake from the pan and set aside. 
  6. Repeat step 5 until you have cooked all of the pancakes.  Add oil to your hot skillet as needed. 
  7. Serve the pancakes with pure maple syrup, fresh fruit and breakfast meat.  Enjoy!

Notes

  • Make sure that you are starting with a HOT skillet! If your skillet is not preheated to a high enough temperature, then your pancakes will spread out throughout the entire pan and will end up too thin.
  • Double-check that your oat flour is certified gluten free.
