Sprinkle the BBQ seasoning over the thighs. Use tongs to toss the chicken into the seasoning blend so that all sides of the chicken thighs are coated in seasoning.
Slow cook the chicken thighs on low for 2.5-3 hours. Transfer the chicken to a baking sheet. I like to pull them apart a little while I'm spreading them out on the baking sheet. Drizzle extra BBQ sauce on your chicken and broil the chicken thighs on high for about 5 minutes. This will make some of the edges around the shredded chicken thigh pieces crispy. This really adds a lot of flavor and texture!
