Marinated Vegetable Salad


Bell Pepper, Carrots, Zucchini, Broccoli, Cauliflower, Tomatoes, Parsley, Basil, Olive Oil, Vinegar, Honey, Dijon, Garlic, Salt, & Pepper

Step 1

Chop your veggies into bite-sized pieces.  You want them small enough to bite into, not big chunks.

Step 2

Whisk the olive oil, red wine vinegar, Dijon mustard, honey, garlic, salt, and pepper together in a small mixing bowl.

Step 3

Transfer your chopped veggies to a large mixing bowl.  Pour the marinade over top of the veggies and mix until the vegetables are thoroughly coated.

Step 4

Cover the mixing bowl and let the raw vegetables and dressing chill in the refrigerator for 1 hour.  After 1 hour, serve, and enjoy!
