Easy Roasted Red Pepper and Tomato Soup 

You only need 8 simple ingredients - 4 of which come from the pantry! This 30 minute soup is quick, easy and delicious!

Sauté the onion and garlic over medium heat. Add the stewed tomatoes, roasted red peppers and chicken broth.  Bring to a boil, then simmer for 5 minutes.

Remove from heat and use an immersion blender to puree the soup.  Then add the basil pesto and heavy cream.  Stir to combine.

Serve the soup while it's hot!  Garnish with fresh basil, homemade croutons and an extra splash of heavy cream. Enjoy!
