Creamy Mashed Potatoes with Cottage Cheese

They're the same irresistibly creamy mashed potatoes you love, except with an entire cup of protein-rich cottage cheese! Serve mashed potatoes with cottage cheese at your next holiday meal for an even more satisfying and nutritious way to enjoy this staple side dish.

  • 2.5 pounds russet potatoes
  • 3 tablespoons salted butter
  • 1 cup whole milk cottage cheese
  • 2 tablespoons full-fat sour cream 
  • 2 tablespoons whole milk
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon kosher salt
  • Optional - fresh herbs for garnish

Instructions

  1. Bring a large pot of water to a boil. Peel the potatoes and chop them into large, equally sized-chunks.
  2. Add the potatoes to the boiling water and cook until fork-tender, about 15 minutes.
  3. Meanwhile, melt the butter in the microwave in a large, microwave-safe dish. I like to use a large glass measuring cup.
  4. Add the cottage cheese, sour cream, milk, and seasonings to the melted butter. Blend the cottage cheese mixture until smooth using an immersion blender.
  5. When the potatoes are done cooking, mash them to your preferred texture. I like to use a potato ricer.
  6. Pour the blended cottage cheese into the mashed potatoes and mix until well combined.
  7. Garnish with fresh herbs (if desired), serve immediately, and enjoy!

Notes

  • Peel and chop the potatoes into evenly sized chunks, so they cook evenly. Halves and quarters are fine. 
  • Don't overmix the mashed potatoes and cottage cheese mixture. Overmixing can result in dense, gummy potatoes. Gentle folding or stirring is key.
